Step:

  1. Preheat oven to 180. Line a loaf tin with baking paper.

  2. All vegetables need to be finely chopped OR minced. The easiest method is process them using a food processor.

  3. Place the vegetables in a large bowl, discard excess liquid from processed vegetables, add all other ingredients, and mix well until evenly combined. Spoon the mixture into the prepared loaf tin, and smooth the surface.

  4. Bake for 50 to 60 minutes or until cooked through. Enjoy with your favourite sauce.


Ingredients

  1. 500 g Minced Lean Meat *Pork, Chicken, Beef OR Lamb
  2. 1 Onion
  3. 1 clove Garlic *finely chopped
  4. 4-5 florets Cauliflower
  5. 4-5 florets Broccoli
  6. 1/2 Carrot
  7. 4-5 Mushrooms
  8. 1 Potato
  9. *Other Suggestions: Peas, Green Beans, Asparagus, Asian Greens, Asian Mushrooms, etc
  10. *You can add cooked Rice as well
  11. 1 Egg
  12. 1 cup Panko Breadcrumbs
  13. 1/2-1 teaspoon Salt
  14. Freshly Ground Pepper as required
  15. Herbs of your choice *Today I used Oregano and Basil
  16. 1/4 cup grated Parmesan
