Step:

  8. Fill the pastry evenly with the simmered apple. Roll out the remaining 1/3 pastry. Make a crisscross pattern and decorate.

  9. Make the gilding and brush it on the pie evenly with a brush.

  10. First bake in a 220 preheated oven for 10 minutes, then bake in 180 oven for 20 minutes. Adjust the time to bake depending on the oven you are using.

  14. 2 to 3 drops Mirin
