Saute the onion with the olive oil.
Add the grated pumpkin, salt, pepper, rice or trahana, spearmint and parsley. Taste, adjust the seasonings and leave it to simmer for 7 minutes or so.
Remove it from the heat and add the egg beaten and the feta cheese. Do not to grate the feta cheese but rather cut it in somewhat large chunks.
Lay a pastry sheet on a greased baking tray 30 cm approximately. Pour the filling and place the second sheet over it after oiling it. Slightly cut the pie and sprinkle with some water. Bake at 170 degrees in a fan oven function for about 45 minutes.
