Place all the ingredients for the filling in a large bowl, mix and cover with a towel. Set aside until the next day.
Prepare the dough and roll out two filo sheets, one larger than the other. Line a pyrex tray with the large filo sheet, add the filling and cover with the second one.
Poke holes with a fork here and there and bake in a preheated oven at 180C for about 40-45 minutes or until golden brown.
