Sauté the finely chopped leeks with the onions, to make them tender.
Add the ground meat and mix, making sure that it doesn't form any lumps.
Add the mushrooms with the carrot.
Stir in the wine and wait a while for it to evaporate.
Add the sweet red peppers, salt, pepper and oregano.
Remove from heat and add the cheeses.
Set it aside to cool for five minutes and add the two eggs, lightly beaten with the milk.
Line a baking tray brushed with butter with half the filo sheets (brush each filo sheet with the melted butter),
Add the filling
And cover with the rest of the filo sheets, each one brushed with butter. Form a decorative ring with the excess filo around the pie, brush well with butter,
Score into pieces, sprinkle a little water
And bake at 180C for about 1 hour (you might have to cover it so that it doesn't burn).
