  4. Gradually add the vegetables and all the spices and finally the tomato with the tomato paste and the sugar. Mix all the ingredients well.

  5. Add water and boil for about 40 minutes over moderate heat until all the water is absorbed and the vegetables cook.

  3. 1 eggplant
  4. 1-2 carrots
  5. 1 sweet red pepper
  6. 1 can diced tomatoes

  9. 1 level tsp sugar
  10. 1 medium-sized onion, finely chopped
  11. 1-2 cloves garlic (optionally)
  12. 4-5 tbsp extra virgin olive oil
  13. finely chopped parsley

  17. 1 tsp sweet paprika
  18. 1 vegetable stock cube
