Using a large bowl mix the flour with the yeast, the salt the sugar and the spearmint.
Add the oil and rub the mixture with your hands so that it absorbs the oil. Add the water and knead. Your dough will be very fluffy. Cover it and set aside to rise at a warm place for an hour.
Place the olives cilantro, spring onions and olive oil in a bowl and mix.
When the one hour is past add the olives with the cilantro and the spring onions to the dough and knead so that all the ingredients are fully incorporated.
Bake in a 33 cm baking tray in a preheated oven at 180C for about 40-45 minutes.
