Step:

  1. Heat olive oil in a dutch oven, season chicken thighs with salt & pepper, cook chicken til golden colored on each side, remove chicken place on a plate.

  2. Saute onions, peppers, mushrooms & garlic for 5 minutes, season with salt & pepper

  3. Place chicken on top of vegtables and add tomatoes & bayleaf.

  4. Bring all to a light boil, then cover & turn down heat to a simmer, but still bubbly.

  5. Add oregano and cook about 45 min to 1 hour. ENJOY:)

  1. 2 tbsp olive oil, extra virgin
  2. 6 boneless & skinless chicken thighs
  3. 1 onion, chopped
  4. 1/2 each red, yellow & green peppers, sliced
  5. 4 oz sliced mushrooms
  6. 2 garlic cloves, chopped
  7. 1 large can of diced tomatoes
  8. 1 bay leaf
  9. 1 salt & pepper to taste
  10. 1 tbsp oregano
