Preheat oven to 350. Spray a 9 inch cake pan with non stick spray. Line the bottom of the pan with parchment paper. Place pan on foil lined baking sheet. Set aside
In a small bowl melt mint chips in microwave carefully. It takes only a few seconds about 40 seconds on high in my microwave, stir until smooth
In a large bowl beat egg yolks, sugar.,salt, sour cream, vanilla.and peppermint extracts until light and foamy snouts minutes
In another large bowl with clean dry beaters beat egg whites until they hold stiff peaks
Stir melted chocolate mint into egg yolk mixture and blend in.
Fold chocolate mixture into egg whites in 3 additions being careful.not to deflate
Pour into prepared pan. Bake 30 to 35 minutes until.it's puffed and a toothpick comes out clean. Don't overbake but be sure center is cooked.. After about 10 minutes run a sharp thin knife arouse edges to release any stuck parts. Then cool completely on wire rack.before carefully removing from pan
Garnish with Whipped Cream, recipe attached below and chocolate mint shavings and sprinkles.
