Step:

  1. Preheat the oven to 190C.

  2. Put the lemon half and the rosemary sprigs inside the chicken.

  3. Separate 3 or 4 other garlic heads into clothes and remove the papery husk's, but don't peel. Slice the top of the other garlic head

  4. Heat the oil in a large casserole. Add the chicken, turning it in the hot oil to coat skin evenly.

  5. Season with salt and pepper and add all the garlic.

  6. Cover the casserole with a sheet of foil, then place the lid on top to seal the steam and the flavour.Cook for 1-1 1/4 hours until the chicken is cooked.

  7. Serve the chicken with all the garlic divided amongst your diners. Tell them to mash the garlic with the juices from the pan (make sure you put on their plates) and you will be surprised, as will they how delicious it all is.

  8. Serve with steamed broad beans and spring onions

  1. 1.8 kg chicken
  2. 4-5 heads garlic (about 40 clothes)
  3. 4 tbsp olive oil
  4. sprigs Fresh rosemary
  5. 1/2 lemon
  6. to taste Salt and ground black pepper
  7. Steamed broad beans and spring onions serve
