Step:

  1. Peel the prawns and set them aside. Put the shells into a large saucepan

  2. Lightly crush the lemongrass and add the stalks to the pan with the stock, lime leaves and ginger. Bring to the boil, lower the heat and simmer for 20 minutes

  3. Strain the stock into a clean pan, discarding the prawn shells and the aromatics. At the fish sauce, lime juice, garlic, spring onions, chili and mushrooms. Bring to the boil then lower the heat and simmer for 5 minutes. Add the peeled prawns and cook for 2 to 3 minutes. Serve, garnish with coriander leaves and lime slices

  1. 225 Graham raw prawns in shells
  2. 2 lemon grass stalks
  3. 1 1/2 L vegetable stock
  4. 4 kaffir lime leaves2 slices peeled fresh root ginger
  5. 2 tbsp Thai fish sauce
  6. 4 tbsp fresh lime juice
  7. 2 garlic close crushed
  8. 6 spring onions chopped
  9. 1 fresh red chili, seeded and cut into thin strips
  10. 115 g oyster mushrooms, sliced
  11. Fresh coriander leaves and kaffir lime slices, to garnish
