Step:

  1. Put the flour and salt together in a large mixing bowl stir quickly together and make a well in the centre, add the eggs and beat with a wooden spoon and as much cold cold water as needed to hold the dough together. This will probably be about half a cup. Stir very firmly until the dough comes away from the sides of the bowl and starts to blister on the surface. Let the dough rest for about 1 hour.

  2. Turn the dough out onto a wet cutting board, and using a knife or the edge of the spoon cut of a regular pieces roughly about 1/2 inch long and the thickness of a pencil.

  3. Drop the pieces into a large part of rapidly boiling water. The galushka are done seconds after they rise to the surface.

  4. Skim off the top of the water with a slotted spoon or drain into a colander.

  5. Turn the galushka into a bowl add butter or olive oil and serve
