Step:

  1. Preheat the oven to 180C

  2. Remove excess fat from chicken. Wash and pat dry with absorbent paper*

  3. Combine garlic and mint and spread under the chicken skin being careful not to break the skin

  4. Heat butter lemon juice and honey in a medium pan stirring well to combine

  5. Brush the chicken well with the honey mixture

  6. Tie wings and drumstick securely in place then place the chicken on a roasting rack in a baking dish and pour water into the dish

  7. Bake 1 hour or until golden. Then brush again with a honey mixture.

  8. Serve with the ginger and almonds

  9. Washing chicken is not always the best way as the splashed water will contain bacteria. The cooking will destroy any bacteria that may be in the chicken, but this is an optional choice.

  1. 1.5 kg chicken
  2. 2 tablespoon finely chopped mint
  3. 2 cloves garlic crushed
  4. 60 g butter
  5. Juice of one large lemon
  6. 1/4 cup honey
  7. 1 1/2 cups water
  8. Preserved ginger and condiments to serve
