Step:

  1. Pour the stock into a saucepan, add the garlic and ginger, soy sauce and vinegar.

  2. Bring to the boil, then cover the pan and reduce the heat to very low. Leave it to simmer gently for 10 minutes

  3. Remove the garlic clove from the pan and discard

  4. Add the sliced mushrooms and spring onions and bring the suit back to the boil simmer for 5 minutes and covered stirring occasionally

  5. Add the noodles and shredded Chinese leaves and simmer for 3 to 4 minutes or until the noodles and vegetables are just tender

  6. Stir in the coriander leaves simmer for a final 1 minute then serve the soup


Ingredients

  1. 1 garlic clove lightly crushed
  2. 2.5 cm piece of fresh ginger root peeled and cut into fine matchsticks
  3. 2 tablespoons soy sauce
  4. 1 tablespoon cider vinegar
  5. 75 g shiitake a button mushrooms, stalks removed and thinly sliced
  6. 2 large spring onions thinly sliced diagonally
  7. 40 g fine noodles of your choice
  8. 175 g Chinese leaves shredded
  9. 1 few fresh coriander leaves
