Step:

  1. Place the noodles in a large pan of boiling water and leave to stand for about 5 minutes

  2. Meanwhile heat 3 tablespoons of the oil in a wok or large frying pan and add the garlic and cook for about 30 seconds

  3. Add the pork and chicken and stir fry on a high heat until lightly browned, then add the shrimps and stir fry for 2 minutes

  4. Add the lime or lemon juice, fish sauce and sugar and stir fry until the sugar has dissolved

  5. Drain the noodles and add to the pan with the remaining tablespoon of oil

  6. Toss all the ingredients together

  7. Pour on the beaten eggs stir fry until almost set, then add the chilli and bean sprouts

  8. Divide the peanuts spring onions and coriander leaves into to and add half to the pan

  9. Stir fry for 2 minutes, then tip onto a serving platter

  10. Sprinkle on the remaining peanuts, spring onions and coriander and serve at once


Ingredients

  1. 225 g thread egg noodles
  2. 4 tablespoons vegetable oil
  3. 2 garlic cloves finely chopped
  4. 175 g pork tenderloin sliced into thin strips
  5. 1 skinless boned chicken breast approximately hundred 175 g sliced into thin strips
  6. hundred and 15 g cooked peeled shrimps
  7. 3 tablespoons lime or lemon juice
  8. 3 tablespoons Oriental fish sauce
  9. 2 tablespoons soft light brown sugar
  10. 2 eggs beaten
  11. 1/2 red chilli - or to taste - seeded and finely chopped
  12. 50 g bean sprouts
  13. 4 tablespoons roasted peanuts, chopped
  14. 3 spring onions cut into 5 cm lengths and shredded
  15. 1 tablespoon chopped fresh coriander
