Preheat the oven to hundred and 80C. Grease a shallow oven proof dish with a little olive oil
Heat the oil in a frying pan, add the onion and garlic and fry for 5 minutes until softened
Add the bacon and fry for 2 minutes, then stir in the courgettes and fry for a further 5 minutes, stirring occasionally and that some of the liquid evaporate. Remove from the heat
Add the tomatoes, rice, herbs, 2 tablespoons of the Parmesan cheese, eggs, fromage frais and seasoning and mix well
Spoon the courgette mixture into the dish and sprinkle over the remaining 2 tablespoons Parmesan cheese.
Bake for 45 minutes until set and golden
